Chef Eiichi Kohno

His culinary journey started at the small Japanese restaurant in Tokyo, Japan when he was 17 years old.

He learned his base of Japanese cuisine with many professional Chefs at restaurants in Tokyo.

In 2004,He moved to Canada and He worked as a sushi chef in Vancouver and Calgary for decade.

Since He determined to learn Italian cuisine, He established his Italian cuisine techniques from one of the top chef in Canada at the high-end Italian restaurant in Calgary Alberta.​

After He moved back to BC, He took a lead as a Head Chef at Casual fine dining restaurant and also as an Executive sous chef at the Italian restaurant in greater Vancouver for many years.​

He also successfully lead many of wine and food pairing events as a chef through his knowledge of wine from the worldwide wine certificate WSET(Wine and Spirit Education Trust) Level 2.

In 2018, He established Stanza Foods as a manufacturing company of Black Garlic products to support local community in a unique way until it closed down due to Covid-19 pandemic.

In 2024, He determined to establish es pizza co. project inspired by Anthony Mangieri who makes a world best pizza using 100% Natural leavened(yeast) Pizza dough which not using commercial yeast.

Chef Eiichi's passion for making Neapolitan pizza with the natural yeast will make everyone happy and smile.

That's what he wants to do and reason why he makes pizza today for you.
